The Pharisees criticized (Surprise! Surprise!), the disciples of Christ for plucking heads of grain and eating them on the Sabbath. Jesus used a couple of incidents from the Scriptures to illustrate why His disciples did not break the Sabbath, and He quoted from Hosea, stating that they did not know what the Lord had said through the prophet that the Lord desires mercy and not sacrifice. Then the Lord declared,
“For the Son of Man is Lord even of the Sabbath” (Matthew 12.8).
Therefore, He knew why He had created the Sabbath, and how an Israelite was to observe and not observe the Sabbath. The Lord knows what He is doing. Do you believe it?
